Herbed Shrimp Stew

Ingredients
- Servings: 4
- 1 (28 ounce) can diced tomatoes with garlic
- 1 cup clam juice
- 1 medium onion, finely chopped
- 1 celery rib, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1/2 cup chopped parsley
- 1 lb medium shrimp, peeled and deveined
- 3 cups cooked rice, kept warm
- salt and pepper
Recipe
- 1 combine all ingredients except parsley, shrimp, rice, salt and pepper in slow cooker; cover and cook on high 3-4 hours, adding parsley shrimp and rice during last 10 minutes.
- 2 season to taste with salt and pepper.
