Frank's Spicy Shrimp Scampi

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 5
  • 1 lb uncooked shrimp, peeled and deveined
  • 1/4 lb butter, 1 stick
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup onion, finely chopped
  • 1 tablespoon garlic, minced
  • 1 tablespoon lemon juice
  • salt, to taste
  • 1/4 teaspoon cayenne pepper, to taste
  • 2 cups rice

Recipe

  • 1 start rice accordingly to package directions.
  • 2 get a medium sized frying pan.
  • 3 melt butter over medium-high heat.
  • 4 add parsley and onions.
  • 5 saute until onions are tender.
  • 6 add lemon juice and garlic; stir.
  • 7 continue to saute approximately another 5 minutes.
  • 8 add shrimp, salt and cayenne pepper, stir to mix well.
  • 9 saute until shrimp are opaque and turn pinkish, about 5 minutes.
  • 10 do not overcook.
