Fran's Easy Shortbread Bars

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 1 cup icing sugar
  • 2 cups butter
  • 3 1/2 cups flour
  • 1 cup rice flour
  • 2 tablespoons sugar

Recipe

  • 1 cream icing sugar and butter until fluffy.
  • 2 combine flours and add to the butter mixture, in small portions.
  • 3 turn batter out into a sided 15 x 9 cookie pan or jelly roll pan. press to the sides and smooth with the back of a spoon.
  • 4 score into bars with a sharp knife and prick the surface with a fork. sprinkle with the 2 tbsp of sugar.
  • 5 bake 10 minutes at 350°, then lower the oven to 300°. bake for 30 - 40 minutes.
  • 6 remove from oven and immediately cut along the scored lines.
  • 7 cool, then store in an airtight container.
