Green Chili Cheesy Rice

Ingredients

- 1 large onion, chopped
- 2 tablespoons butter
- 4 cups cooked rice, hot
- 2 cups sour cream
- 1 cup small curd cottage cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 (4 ounce) cans chopped green chilies, drained
- 2 cups cheddar cheese, shredded
Recipe
- 1 in a large skillet, cook onion in butter until translucent.
- 2 remove from heat.
- 3 stir in rice, sour cream, cottage cheese, salt and pepper.
- 4 spoon 1/2 the mixture into a 7x11" baking dish.
- 5 top with 1/2 the chilies and cheese; repeat.
- 6 bake uncovered at 375 degrees for 20-25 minutes or until heated through.
