Green Chili Cheesy Rice

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 large onion, chopped
  • 2 tablespoons butter
  • 4 cups cooked rice, hot
  • 2 cups sour cream
  • 1 cup small curd cottage cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 (4 ounce) cans chopped green chilies, drained
  • 2 cups cheddar cheese, shredded

Recipe

  • 1 in a large skillet, cook onion in butter until translucent.
  • 2 remove from heat.
  • 3 stir in rice, sour cream, cottage cheese, salt and pepper.
  • 4 spoon 1/2 the mixture into a 7x11" baking dish.
  • 5 top with 1/2 the chilies and cheese; repeat.
  • 6 bake uncovered at 375 degrees for 20-25 minutes or until heated through.
