Inside-out Brussels Sprouts

Ingredients

- 1 1/2 cups uncooked instant rice
- 1 medium onion, chopped
- 2 eggs, lightly beaten
- 1 1/2 teaspoons garlic salt
- 1/2 teaspoon pepper
- 2 lbs ground beef
- 1 (10 ounce) package frozen brussels sprouts
- 2 (15 ounce) cans tomato sauce
- 1 cup water
- 1 teaspoon dried thyme
Recipe
- 1 in a large bowl, combine the first 5 ingredients; crumble beef over mixture and mix well.
- 2 cut an x in the core of each brussels sprout.
- 3 shape a scant 1/4 cup full around each frozen brussels sprout to form a meatball.
- 4 place in an ungreased 15 x 10 x 1 inch baking dish.
- 5 combine tomato sauce, water and thyme; pour over meatballs.
- 6 cover and bake at 350°f for 1 hour and 15 minutes or until meatballs are no longer pink.
