Inside-out Brussels Sprouts

Total Time: 1 hr 35 mins Preparation Time: 20 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 8
  • 1 1/2 cups uncooked instant rice
  • 1 medium onion, chopped
  • 2 eggs, lightly beaten
  • 1 1/2 teaspoons garlic salt
  • 1/2 teaspoon pepper
  • 2 lbs ground beef
  • 1 (10 ounce) package frozen brussels sprouts
  • 2 (15 ounce) cans tomato sauce
  • 1 cup water
  • 1 teaspoon dried thyme

Recipe

  • 1 in a large bowl, combine the first 5 ingredients; crumble beef over mixture and mix well.
  • 2 cut an x in the core of each brussels sprout.
  • 3 shape a scant 1/4 cup full around each frozen brussels sprout to form a meatball.
  • 4 place in an ungreased 15 x 10 x 1 inch baking dish.
  • 5 combine tomato sauce, water and thyme; pour over meatballs.
  • 6 cover and bake at 350°f for 1 hour and 15 minutes or until meatballs are no longer pink.
