Fettuccine With Spinach, Red Peppers And Smoked Cheese

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/3 cup olive oil
  • 4 garlic cloves, minced
  • 1 red bell pepper, sliced into thin 2 inch long strips
  • 1 (10 ounce) package spinach
  • 1/2 salt
  • pepper
  • 1 lb fettuccine
  • 1 cup grated smoked gruyere cheese

Recipe

  • 1 bring a large stock of water to a boil.
  • 2 heat 1/4 cup of olive oil in a large skillet over medium heat.
  • 3 saute garlic for 1 minute then add peppers and saute 7 minutes more.
  • 4 pile on the spinach and cover the pan, cook about 3 minutes, until wilted.
  • 5 add salt and ground pepper and keep warm.
  • 6 when water comes to a boil add pasta and cook until tender.
  • 7 reserve 1/4 cup of pasta water and drain remainder.
  • 8 toss pasta with remainder of oil and stir in cheese to melt.
  • 9 add reserved water as needed get cheese smooth.
  • 10 to serve, put pasta on a plate and top with vegetable mixture.
