Granola Bar One-bites

Ingredients

  • 2 tablespoons vegetable oil
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 2 tablespoons flax seed meal
  • 2 tablespoons water
  • 1 ripe banana, sliced
  • 1 teaspoon vanilla extract
  • 1/2 cup bob's red mill rice flour
  • 2 tablespoons bob's red mill tapioca flour
  • 1 teaspoon ground cinnamon
  • 1 1/3 cups enjoy life granola cereal, any flavor
  • 1 cup enjoy life not nuts

Recipe

  • 1 preheat oven to 350℉.
  • 2 with a mixer, cream together the first 7 ingredients (through vanilla). mix in flours and cinnamon until smooth. stir in granola and trail mix. if desired, place granola in a plastic bag and gently crush with a rolling pin into bite-size pieces. spoon mixture into a greased 9-inch baking pan or greased mini muffin pan.
  • 3 bake for 30 minutes if using the 9-inch baking pan or 20 minutes if using the mini muffin pan. cool and cut into small bars or remove from muffin pan.
