Indonesian Chicken And Rice

Ingredients

- 1/4 cup hot chicken broth
- 1 teaspoon dark corn syrup
- 2 tablespoons soya sauce
- 3 tablespoons oil
- 4 chicken breast halves (diced)
- 1 small onion, chopped
- 1 small red pepper, chopped
- 1 teaspoon ginger, ground
- 1 teaspoon crushed red pepper powder
- 2 teaspoons curry powder
- 3 cups cold cooked rice
- 1/2 cup chopped peanuts
- 1/2 cup scallion, minced
- 1/4 cup parsley, minced
Recipe
- 1 mix broth, corn syrup and soya sauce.
- 2 stir fry chicken in hot oil.
- 3 add onion, red pepper, ginger and crushed red pepper.
- 4 cook for 30 seconds.
- 5 stir in curry powder and rice.
- 6 cook for 2-3 minutes.
- 7 add liquids.
- 8 stir in peanuts, scallions and parsley.
- 9 serve hot!
