Easy Shortbread
Ingredients
- Servings: 48
- 1 cup sugar
- 1 lb butter
- 3 1/2 cups flour, all purpose
- 1 cup rice flour
- 2 tablespoons sugar
Recipe
- 1 preheat oven to 350f.
- 2 place 1 cup sugar in food processor; blend 30 sec.
- 3 (or use fruit sugar).
- 4 add to softened butter and cream mixture until very fluffy.
- 5 combine flour and rice flour.
- 6 beat into batter in small portions.
- 7 turn batter out onto a lightly floured surface.
- 8 knead until smooth, adding up to 1/2 c more all-purpose flour, if needed.
- 9 press into a 15 x 9 jelly roll pan.
- 10 score into bars with a sharp knife.
- 11 prick surface with fork.
- 12 sprinkle with remaining 2 t sugar.
- 13 bake 10 minutes then lower heat to 300f and bake until golden, about 30 to 40 minutes.
