Easy Shortbread

Ingredients

  • Servings: 48
  • 1 cup sugar
  • 1 lb butter
  • 3 1/2 cups flour, all purpose
  • 1 cup rice flour
  • 2 tablespoons sugar

Recipe

  • 1 preheat oven to 350f.
  • 2 place 1 cup sugar in food processor; blend 30 sec.
  • 3 (or use fruit sugar).
  • 4 add to softened butter and cream mixture until very fluffy.
  • 5 combine flour and rice flour.
  • 6 beat into batter in small portions.
  • 7 turn batter out onto a lightly floured surface.
  • 8 knead until smooth, adding up to 1/2 c more all-purpose flour, if needed.
  • 9 press into a 15 x 9 jelly roll pan.
  • 10 score into bars with a sharp knife.
  • 11 prick surface with fork.
  • 12 sprinkle with remaining 2 t sugar.
  • 13 bake 10 minutes then lower heat to 300f and bake until golden, about 30 to 40 minutes.
