Jambalaya

Total Time: 8 hrs 30 mins Preparation Time: 30 mins Cook Time: 8 hrs

Ingredients

  • Servings: 6
  • 12 ounces boneless skinless chicken breasts
  • 2 green peppers, chopped
  • 1 medium onion, chopped
  • 2 stalks celery, sliced
  • 1 (14 1/2 ounce) can whole tomatoes
  • 1/3 cup tomato paste
  • 1 1/2 cans beef broth
  • 1 teaspoon dried parsley
  • 1 1/2 teaspoons dried basil leaves
  • 1/2 teaspoon dried oregano leaves
  • 1 teaspoon tabasco sauce
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 lb shelled, steamed shrimp
  • 3 cups cooked rice

Recipe

  • 1 cut chicken into 1-inch pieces.
  • 2 add all ingredients, except shrimp and rice, to crock pot.
  • 3 cook on low 8-10 hours or 3-4 hours on high.
  • 4 add shrimp the last 15-30 minutes of cooking.
  • 5 stir in rice when ready to serve.
