Iraqi Pink Rice Plow Ahmar

Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cups rice
- 1 (4 ounce) can tomato sauce
- 4 tomatoes, large chopped
- 1/4 cup cilantro, minced for garnish
- 2 stalks celery, diced
- 1 teaspoon salt
- 1 1/2 teaspoons dill weed
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
Recipe
- 1 heat olive oil.
- 2 add onion; fry until translucent.
- 3 add washed rice; stir 2 minutes.
- 4 add tomato sauce, tomatoes, celery, salt, dillweed, pepper and garlic powder.
- 5 add 3 1/2 cups water.
- 6 after it comes to a boil. turn heat to simmer.
- 7 cover and cook until rice is tender; do not open lid for 30 minutes.
