Crock Pot Creamy Beef Curry

Ingredients

  • Servings: 6
  • 1 tablespoon vegetable oil
  • 2 lbs stewing beef, trimmed and cut into 1 inch cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1 teaspoon minced gingerroot
  • 1 -2 long red chili peppers or 1 -2 green chili pepper
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon cracked black peppercorns
  • 4 green cardamom pods or 4 cardamom pods
  • 4 whole cloves
  • 1/2 cup beef stock or 1/2 cup water
  • 1 bay leaf
  • 1/4 cup ground almonds
  • 1/2 cup plain yogurt (optional)
  • hot cooked rice

Recipe

  • 1 in a skillet, heat oil over medium-high heat.
  • 2 add beef, in batches, and brown.
  • 3 using a slotted spoon, transfer to slow cooker stoneware.
  • 4 reduce heat to medium.
  • 5 add onions and cook, stirring, until softened.
  • 6 add garlic, gingerroot, chilli pepper, cumin, coriander, turmeric, salt, peppercorns, cardamom and cloves and cook, stirring, for 1 minute.
  • 7 add beef stock and bay leaf and bring to a boil.
  • 8 pour mixture over beef.
  • 9 stir to combine.
  • 10 cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours, until beef is tender.
  • 11 stir in almonds, cover and cook on high for 10 minutes.
  • 12 stir in yogurt, if using, and serve over hot cooked rice.
