Crock Pot Creamy Beef Curry

Ingredients

- 1 tablespoon vegetable oil
- 2 lbs stewing beef, trimmed and cut into 1 inch cubes
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1 teaspoon minced gingerroot
- 1 -2 long red chili peppers or 1 -2 green chili pepper
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon cracked black peppercorns
- 4 green cardamom pods or 4 cardamom pods
- 4 whole cloves
- 1/2 cup beef stock or 1/2 cup water
- 1 bay leaf
- 1/4 cup ground almonds
- 1/2 cup plain yogurt (optional)
- hot cooked rice
Recipe
- 1 in a skillet, heat oil over medium-high heat.
- 2 add beef, in batches, and brown.
- 3 using a slotted spoon, transfer to slow cooker stoneware.
- 4 reduce heat to medium.
- 5 add onions and cook, stirring, until softened.
- 6 add garlic, gingerroot, chilli pepper, cumin, coriander, turmeric, salt, peppercorns, cardamom and cloves and cook, stirring, for 1 minute.
- 7 add beef stock and bay leaf and bring to a boil.
- 8 pour mixture over beef.
- 9 stir to combine.
- 10 cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours, until beef is tender.
- 11 stir in almonds, cover and cook on high for 10 minutes.
- 12 stir in yogurt, if using, and serve over hot cooked rice.
