Classic Black Beans And Rice

Ingredients
- Servings: 4
- 1 large onion, chopped
- 2 bell peppers, chopped
- 4 garlic cloves, mnced
- 2 (15 ounce) cans black beans, drained
- 1 cup water
- 1 tablespoon oregano, add more if you prefer
- salt
- 1 tablespoon cider vinegar
Recipe
- 1 saute the onion till it begins to caramelize.
- 2 add garlic, then bell pepper.
- 3 saute some more, then add the black beans.
- 4 add the remaining ingredients and simmer till thickened. if you need more water, add a bit at a time.
- 5 instead of salt, use a packet of goya sazon, available in the spanish section of your local supermarket - at least in the east coast. otherwise just use salt.
- 6 serve over rice.
