Classic Black Beans And Rice

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 large onion, chopped
  • 2 bell peppers, chopped
  • 4 garlic cloves, mnced
  • 2 (15 ounce) cans black beans, drained
  • 1 cup water
  • 1 tablespoon oregano, add more if you prefer
  • salt
  • 1 tablespoon cider vinegar

Recipe

  • 1 saute the onion till it begins to caramelize.
  • 2 add garlic, then bell pepper.
  • 3 saute some more, then add the black beans.
  • 4 add the remaining ingredients and simmer till thickened. if you need more water, add a bit at a time.
  • 5 instead of salt, use a packet of goya sazon, available in the spanish section of your local supermarket - at least in the east coast. otherwise just use salt.
  • 6 serve over rice.
