Farfalle With Lima Beans And Sun Dried Tomatoes

Ingredients

  • Servings: 4
  • 6 tablespoons olive oil
  • 1/2 cup coarsely chopped onion
  • 8 sun-dried tomatoes, thinly sliced (packed in olive oil)
  • 1 garlic clove, minced
  • 8 ounces farfalle pasta
  • 1 (10 ounce) package frozen lima beans
  • fresh ground black pepper

Recipe

  • 1 heat oil in a medium skillet; add the onion and sauté until golden; stir in the tomatoes and garlic. set aside.
  • 2 meanwhile cook the farfalle in plenty of boiling salted water, 3 minutes.
  • 3 add the lima beans and cook until both the pasta and lima beans are tender. drain.
  • 4 toss the onions and pasta together and toss until blended.
