Cucumber Garbanzo Appetizer Shells

Ingredients

- 12 ounces jumbo pasta shells
- 2 cups cucumbers, finely diced
- 1/2 cup red onion, finely chopped
- 2 cups tomatoes, finely diced
- 1/2 cup basil, chopped
- 1 cup feta cheese, crumbled
- 2 (15 ounce) cans garbanzo beans, drained
- 4 tablespoons olive oil
- 4 tablespoons red wine vinegar
- 1 1/2 tablespoons sugar
- 1 1/2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 cook shells al dente according to package directions, rinse in cold water; set aside.
- 2 mix salad ingredients together.
- 3 whisk dressing ingredients together and toss with salad.
- 4 stuff salad into pasta shells.
- 5 chill 2-4 hours.
