Cucumber Garbanzo Appetizer Shells

Total Time: 2 hrs 30 mins Preparation Time: 30 mins Cook Time: 2 hrs

Ingredients

  • Servings: 20
  • 12 ounces jumbo pasta shells
  • 2 cups cucumbers, finely diced
  • 1/2 cup red onion, finely chopped
  • 2 cups tomatoes, finely diced
  • 1/2 cup basil, chopped
  • 1 cup feta cheese, crumbled
  • 2 (15 ounce) cans garbanzo beans, drained
  • 4 tablespoons olive oil
  • 4 tablespoons red wine vinegar
  • 1 1/2 tablespoons sugar
  • 1 1/2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 cook shells al dente according to package directions, rinse in cold water; set aside.
  • 2 mix salad ingredients together.
  • 3 whisk dressing ingredients together and toss with salad.
  • 4 stuff salad into pasta shells.
  • 5 chill 2-4 hours.
