Jamaican Brown Stew Chicken

Ingredients
- Servings: 4
- 2 teaspoons olive oil
- 1 cup onion (chopped)
- 3 garlic cloves (minced)
- 1 lb boneless skinless chicken breast, cut into bite-sized pieces
- 1 teaspoon curry powder
- 1 teaspoon dried thyme
- 1/2 teaspoon ground allspice
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon cracked black pepper
- 1/4 cup dry red wine
- 1 (15 ounce) can black beans, rinsed & drained
- 1 (14 1/2 ounce) can diced tomatoes (undrained)
Recipe
- 1 heat oil in large nonstick skillet over medium-high heat.
- 2 add onion & garlic, saute 3 minutes or until tender.
- 3 combine chicken & the next 5 ingredients (chicken through black pepper) in a bowl. add chicken mixture to pan, saute 4 minutes. stir in wine, beans & tomatoes.
- 4 cover, reduce heat & simmer 10 minutes or until tender.
- 5 serve over rice.
