Garlic Shrimp No Yolks Noodles

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 package no yolk noodles
  • 2 tablespoons olive oil
  • 1/2 cup olive oil
  • 4 teaspoons garlic, minced
  • 1/4 cup lemon juice
  • 1 1/2-2 lbs medium-sized shrimp, cleaned
  • 1/2 cup parmesan cheese, shredded
  • 1 cup green onion, chopped
  • 1 tablespoon parsley, chopped

Recipe

  • 1 cook noodles according to package directions, set aside.
  • 2 in medium saute pan, place 2 tablespoons olive oil over medium heat.
  • 3 add 3 teaspoons of the garlic, saute about 1 minute.
  • 4 add shrimp, cook until pink and thoroughly cooked.
  • 5 let cool.
  • 6 combine noodles and cooled shrimp, add green onions.
  • 7 in seperate bowl make dressing by combining 1/2 cup olive oil with 1 teaspoon garlic, lemon juice and parmesan cheese.
  • 8 mix throughly.
  • 9 sprinkle parsley onto pasta mixture.
  • 10 add dressing and toss.
  • 11 let cool in refrigerator about 1/2 hour, or for warm entree, severe immediately.

Hot & Tangy Ziti Salad With Scallops

Ingredients

  • 10 ounces cooked ziti pasta
  • 2 -3 tablespoons olive oil
  • 3 cloves of minced garlic
  • 6 ounces scallops
  • 1 1/4 cups unsweetened pineapple juice
  • 1/4 cup lemon juice
  • 3 tablespoons tomato paste
  • 1 1/4 teaspoons chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1 red bell pepper (slivered)
  • 1 green pepper (slivered)
  • 1 cucumber (peeled, seeded, and diced)
  • 1/4 cup red onion (minced)
  • 1/4 cup fresh parsley (chopped)

Recipe

  • 1 in a large nonstick pan heat 1-2 tablespoons of olive oil.
  • 2 saute garlic until soft.
  • 3 add scallops, cover, and cook for just a few minutes.
  • 4 when scallops are opaque take out of pan and set in large mixing bowl.
  • 5 add the juices, paste, 1 tbsp of olive oil, chili powder, salt, and pepper flakes to the pan with the garlic.
  • 6 on high heat bring to a boil and stir until mixture is thick.
  • 7 pour mixture over the scallops and add peppers, cucumbers, onion, and parsley-stir.
  • 8 toss in the ziti and stir some more.

Garlic Tortilla Chips

Ingredients

  • 8 (8 inch) flour tortillas
  • olive oil nonstick cooking spray
  • garlic salt

Recipe

  • 1 cut each flour tortilla into 8 wedges. coat one side of tortilla wedges with cooking spray; sprinkle garlic salt over the top.
  • 2 arrange tortilla wedges on parchment-lined baking sheet. bake in 350 degree fahrenheit oven until crispy, about 10 minutes.

Ingredients

  • 1/2 cup mashed over ripe banana
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2/3 cup rice or 2/3 cup soymilk
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup finely chopped dark chocolate or 1/4 cup semisweet vegan chocolate chips, chopped
  • for frosting
  • 1/2 cup margarine, softened
  • 4 tablespoons shortening
  • 2/3 cup creamy peanut butter
  • 2 tablespoons honey
  • 3 teaspoons vanilla extract
  • 2 1/2 cups confectioners' sugar, sifted
  • 2 -4 tablespoons soymilk
  • decorating ganache
  • 3 tablespoons soymilk
  • 1/3 cup semi-sweet chocolate chips

Recipe

  • 1 preheat your oven to 350 degrees and line your pan with paper liners.
  • 2 throw your mashed banana in a blender or or just smash it into oblivious with a fork. just try to get the lumps out.
  • 3 sift the flour, baking soda, baking powder, salt and sugar into a large bowl, mix well. in a smaller bowl, whisk together the oil, soy or rice milk, vanilla, almond and mashed banana. stir or fold the wet ingredients into the dry, but don’t over mix or you’ll get tough cupcakes. small lumps are fine. finally, add the chocolate, folding gently.
  • 4 fill liners 2/3 full. bake 20-22 minutes or until a toothpick comes out clean.
  • 5 frosting.
  • 6 with an electric mixer, cream together margarine and shortening until smooth.
  • 7 add peanut butter, molasses if using and vanilla, beat until very smooth.
  • 8 beat in sugar, mixture will be very stiff.
  • 9 dribble in soy milk a little at a time, beating continuously until frosting is pale and fluffy.
  • 10 decorating ganache.
  • 11 heat soy milk in a small saucepan over medium heat until almost simmering. remove from heat and stir in chocolate chips. set aside to cool about 10 minutes, then use a piping bag or a fork to shake chocolate all over frosted cupcakes. the ganache will set up when cool.
  • 12 i topped this with chopped cashews, you could use any kind of nut or some sprinkles. a candied cherry on top and the king has left the building.

Double Chocolate Cookies

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 cup sugar
  • 1/4 cup margarine
  • 1/3 cup oil
  • 2/3 cup soymilk or 2/3 cup rice milk or 2/3 cup cow milk
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Recipe

  • 1 cream together magarine and sugar, then add oil.
  • 2 slowly stir in vanilla and milk til blended.
  • 3 in separate bowl, mix dry ingredients.
  • 4 stir into the"wet" ingredients and mix.
  • 5 when half mixed, pour in the chips and blend til ingredients are just mixed.
  • 6 drop by generous spoonful onto greased cookie sheet.
  • 7 bake ate 350% for 10- 15 minutes.

Ham Rice Wheels

Total Time: 3 hrs Preparation Time: 3 hrs

Ingredients

  • 6 ounces cream cheese (i use lite)
  • 1 cup cooked rice
  • 6 tablespoons olives, chopped
  • 3 tablespoons onions, grated
  • 1 1/2 teaspoons horseradish
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon worcestershire sauce
  • 8 slices boiled ham, thin (4" x 6")

Recipe

  • 1 in a medium bowl, cream cheese untill fluffy.
  • 2 add rice, olives, onion, horseradish, sweet pickle relish and worcestershire sauce; blend well spread each ham slice with approximately 2 tablespoons mixture.
  • 3 roll tightly, securing each roll with toothpicks.
  • 4 cover and chill several hours.
  • 5 before serving, cut into 1" pieces and remove toothpicks.
