Jeanette's Perfect Cornbread

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/4 cup soft shortening or 1/4 cup bacon grease

Recipe

  • 1 mix together dry ingredients in one bowl using a whisk, if available.
  • 2 mix wet ingredients in a separate bowl, again using a whisk.
  • 3 combine wet ingredients and dry ingredients, mixing just until combined (a few lumps will remain).
  • 4 carefully take the preheated cast iron skillet from the oven and pour in the batter, using a spatula to get everything out of the bowl.
  • 5 as an alternative, this recipe can be baked in any shallow pan, approximately 9" round or square.
  • 6 bake in a preheated 425° oven until a cake tester or table knife can be inserted into the center and removed with no batter residue.
