Jeanette's Perfect Cornbread

Ingredients
- 1 cup flour
- 1 cup cornmeal
- 1/4 cup sugar
- 4 teaspoons baking powder
- 3/4 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/4 cup soft shortening or 1/4 cup bacon grease
Recipe
- 1 mix together dry ingredients in one bowl using a whisk, if available.
- 2 mix wet ingredients in a separate bowl, again using a whisk.
- 3 combine wet ingredients and dry ingredients, mixing just until combined (a few lumps will remain).
- 4 carefully take the preheated cast iron skillet from the oven and pour in the batter, using a spatula to get everything out of the bowl.
- 5 as an alternative, this recipe can be baked in any shallow pan, approximately 9" round or square.
- 6 bake in a preheated 425° oven until a cake tester or table knife can be inserted into the center and removed with no batter residue.
