Easy Pierogi Casserole

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 12
  • 9 lasagna noodles, uncooked
  • 4 cups hot mashed potatoes
  • 1/2 cup philadelphia chive & onion cream cheese spread
  • 6 green onions, thinly sliced
  • 1 (3 ounce) package oscar mayer real bacon bits, divided
  • 2 cups kraft shredded triple cheddar cheese with a touch of philadelphia, divided

Recipe

  • 1 heat oven to 375°f.
  • 2 cook noodles as directed on package, omitting salt. meanwhile, combine potatoes, cream cheese spread, onions, 1/2 cup bacon and 1 cup cheddar.
  • 3 place 3 noodles in 13x9-inch baking dish sprayed with cooking spray; cover with 1/3 of the potato mixture. repeat layers twice. top with remaining bacon and cheddar; cover.
  • 4 bake 30 minute or until heated through. uncover; bake 3 to 5 minute or until cheese is lightly browned. let stand 10 minute before cutting to serve.

Ingredients

  • 4 ounces boneless skinless chicken breasts, cut into 8 nuggets
  • 2 tablespoons liquid egg substitute (like egg beaters original)
  • 2 tablespoons whole wheat flour
  • 2 tablespoons sweet chili sauce
  • 1 teaspoon seasoned rice vinegar
  • 1/4 teaspoon red pepper flakes
  • 1 dash salt
  • 1 dash black pepper

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 line a baking sheet with aluminum foil and/or spray with nonstick spray.
  • 3 place chicken in a bowl, cover with egg substitute, and toss to coat. set aside.
  • 4 in a separate bowl, combine flour, salt, and black pepper, and mix well.
  • 5 one at a time, transfer chicken nuggets to the flour bowl, giving them a shake first to remove excess egg substitute -- coat completely with flour, and then transfer to the baking sheet.
  • 6 bake in the oven for about 16 minutes, flipping halfway through, until chicken is fully cooked. remove from the oven and set aside.
  • 7 combine chili sauce, vinegar, and red pepper flakes in a bowl and mix well. add chicken and toss to coat.

Brazilian Rice

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 1 cup onion, chopped
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 1 cup tomato, chopped
  • 1 cup long grain rice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups water or 1 1/2 cups broth

Recipe

  • 1 wash and drain rice.
  • 2 set aside.
  • 3 saute onion and garlic in olive oil until soft.
  • 4 add tomatoes, rice, salt, pepper and water or broth.
  • 5 bring to a boil.
  • 6 bring heat to medium.
  • 7 cook until all bubbles on surface have disappeared.
  • 8 cover and cook on low heat for 20 minutes.

Easy Pilau Rice

  • 1 ounce butter
  • 1 cup basmati rice
  • 1 teaspoon turmeric
  • 1 bay leaf
  • 4 green cardamom pods
  • 4 cloves
  • 1/2 teaspoon fennel seed
  • 1 teaspoon salt
  • 1 1/2 cups boiling water

Recipe

  • 1 melt the butter in a saucepan.
  • 2 stir in the rice until it is coated in the butter.
  • 3 add the spices and salt.
  • 4 add the boiling water.
  • 5 cover with a tight fitting lid, and simmer on the lowest heat for 15 minutes--do not stir in the meantime.

Karen's Veggie Burritos

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 (10 ounce) can rotel
  • 1 (15 1/2 ounce) can black beans
  • 1 (16 ounce) can vegetarian baked beans
  • 2 cups corn, frozen
  • 2 cups cooked brown rice
  • 4 -6 tortillas, of choice

Recipe

  • 1 saute onion and garlic in the olive oil.
  • 2 when softened add rotel, black beans, baked beans, and corn.
  • 3 let simmer down to get some of the fluid out for about 15 minutes.
  • 4 put some rice on the tortilla then top with bean mixture and roll.

  • 1 1/3 cups water
  • 2 tablespoons butter or 2 tablespoons margarine
  • 3 tablespoons honey
  • 1 1/2 cups bread flour
  • 1 1/3 cups whole wheat flour
  • 1/2 cup flax seed
  • 1 1/2 teaspoons salt
  • 1 teaspoon bread machine yeast

Recipe

  • 1 add ingredients to machine according to manufacturer's directions. select basic cycle. enjoy!
