Brazilian Rice

Ingredients
- 1 cup onion, chopped
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 1 cup tomato, chopped
- 1 cup long grain rice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups water or 1 1/2 cups broth
Recipe
- 1 wash and drain rice.
- 2 set aside.
- 3 saute onion and garlic in olive oil until soft.
- 4 add tomatoes, rice, salt, pepper and water or broth.
- 5 bring to a boil.
- 6 bring heat to medium.
- 7 cook until all bubbles on surface have disappeared.
- 8 cover and cook on low heat for 20 minutes.
