Indonesian Spiced Rice

Total Time: 27 mins Preparation Time: 5 mins Cook Time: 22 mins

Ingredients

  • Servings: 4
  • 1 1/2 tablespoons oil
  • 1 large onion, chopped
  • 1 (4 ounce) can green chilies, chopped
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • 1/2 lb rice
  • 1 (14 1/2 ounce) can chicken broth
  • 2 1/2 tablespoons water
  • 1 bay leaf
  • 1/8 teaspoon cayenne pepper
  • scallion, chopped

Recipe

  • 1 heat oil in large heavy saucepan over medium heat.
  • 2 add chopped onion and chilies and stir until onion is translucent.
  • 3 mix in turmeric and cinnamon.
  • 4 add rice and stir 2 minutes.
  • 5 add chicken broth, water, bay leaf and cayenne pepper.
  • 6 bring to a boil; reduce heat, cover and cook until liquid is absorbed, about 20 minutes.
  • 7 sprinkle green onions on top before serving.
