Hot & Spicy Garlic Chicken

Ingredients

  • Servings: 2
  • 1/2 lb chicken breast, chopped
  • 1 tablespoon garlic, chopped
  • 2 teaspoons hot chili powder
  • 1 1/2 tablespoons tomato puree
  • salt
  • 1 teaspoon sugar
  • 1/2 cup chicken stock
  • 1 tablespoon cornflour
  • 4 tablespoons cooking oil
  • 1 teaspoon vinegar
  • 2 tablespoons red bell peppers or 2 tablespoons green bell peppers
  • 1 tablespoon onion, finely chopped
  • 1 tablespoon spring onion, finely chopped

  • 1 egg
  • 3/4 teaspoon salt
  • 1 tablespoon cornflour
  • 1 tablespoon cooking oil

Recipe

  • 1 marinade the chicken with all the marinade ingredients, and set aside for 30 minute.
  • 2 heat 4 tbsp oil in a wok and stir fry the chicken for 10 min over a medium heat.
  • 3 drain and set aside.
  • 4 in the same oil add garlic and red chilli powder.
  • 5 fry for 3 minutes and add tomato puree, bell pepper, onion and spring onion.
  • 6 stir fry for 3 minutes on high heat.
  • 7 add fried chicken.
  • 8 stir-fry and add salt, sugar and chicken stock.
  • 9 mix the cornflour in 1/4 cup water and add to chicken slowly, stirring continuously to thicken the sauce.
  • 10 finish with the vinegar.
  • 11 serve with fried rice or noodles.
