Frugal Tortellini & Veggies

Ingredients

  • Servings: 4
  • 1 (16 ounce) package frozen cheese tortellini
  • 1 -2 medium zucchini, sliced thickly & then cut in half
  • 1/3 cup olive oil
  • 1 -2 chopped tomato
  • 1 chopped onion
  • parmesan cheese, for topping

Recipe

  • 1 cook and drain tortellini according to package directions.
  • 2 heat olive oil in a large skillet.
  • 3 sautee onion and zucchini until transparent& tender.
  • 4 add tomatoes and simmer, 3-5 minutes.
  • 5 combine tortellini with vegetables and sprinkle with parmesan cheese.

Chana Masala In The Slow Cooker

Ingredients

  • Servings: 6
  • 4 cups water
  • 1 large onion, diced
  • 1 (28 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 1/3 cup fresh cilantro leaves, chopped
  • 2 teaspoons garam masala
  • 2 teaspoons garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper (more if you like more of a kick)
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon sea salt
  • 2 (15 ounce) cans chickpeas
  • serve over basmati rice

Recipe

  • 1 combine everything except the chickpeas and basmati rice in your slow cooker and turn on low for 6-8 hours.
  • 2 add chickpeas.
  • 3 cook 2 more hours until they're tender and have incorporated the indian flavors.
  • 4 serve over basmati rice.

Havana Chili

Ingredients

  • 2 tablespoons oil
  • 1 onion, chopped
  • 3 chopped garlic cloves
  • 1 lb ground beef
  • 1 lb ground lamb
  • 1 (14 ounce) can beef broth
  • 2 (14 1/2 ounce) cans chopped tomatoes
  • 2 (16 ounce) cans black beans, drained
  • 2 tablespoons balsamic vinegar
  • 1/3 cup raisins
  • 2 tablespoons chili powder
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1/2 teaspoon allspice
  • 1/4 teaspoon clove
  • salt
  • 1/4 cup green olives, halved
  • 1/4 cup slivered almonds
  • cooked rice

Recipe

  • 1 heat oil in dutch oven, stir in onions and garlic, cook until softened.
  • 2 add meats, cook until brown, breaking up lumps; drain fat.
  • 3 add black beans, broth, tomatoes and spices, bring to boil.
  • 4 reduce heat and simmer 30 minutes, partially covered.
  • 5 uncover and cook 30 minutes.
  • 6 add olives and almonds and cook 5 minutes.
  • 7 serve over rice.

Farmhouse Pizza

Total Time: 45 mins Preparation Time: 22 mins Cook Time: 23 mins

Ingredients

  • 1 (16 ounce) frozen whole wheat bread dough or 1 (16 ounce) frozen bread dough
  • shortening
  • all-purpose flour
  • 4 slices bacon
  • 1 cup loose-pack frozen hash browns with onions and peppers
  • 1/8 teaspoon black pepper
  • 8 eggs
  • 1/2 cup milk
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 cup shredded cheddar cheese (4 ounces)

Recipe

  • 1 thaw bread dough according to package directions.
  • 2 turn on the oven to 375°f grease a pizza pan with shortening.
  • 3 put thawed bread dough on the pizza pan. fatten the dough slightly. use your hands to press the dough into the pizza pan, covering the pan completely. (sprinkle flour over your hands if dough is sticky.) with your fingers press edges up into a rim. prick dough generously with the fork. put pizza pan in oven. bake for 15 to 20 minutes or until pizza crust is light brown. use hot pads to remove pizza pan from oven. place on a cooling rack.
  • 4 use scissors to cut bacon into bite-size pieces. put bacon pieces, frozen potato mixture, and black pepper in a medium skillet. put skillet on a burner. turn burner to medium-high heat. cook and stir with a wooden spoon about 5 minutes or until bacon pieces are crisp and potatoes are tender. turn off burner. remove skillet from burner. place a colander over a bowl. spoon potatoes and bacon into the colander and let the fat drain into the bowl. save potatoes and bacon until step 8. put fat in a container to throw away.
  • 5 crack eggs in a medium bowl. add the milk. use a whisk to beat the eggs and milk together.
  • 6 put butter in a large skillet. put skillet on burner. turn burner to medium heat. melt the butter. when butter is melted, pour the egg mixture into the skillet. cook, without stirring, until egg mixture begins to et on the bottom and around the edges.
  • 7 use a pancake turner to lift and fold partially cooked eggs so that the uncooked portion flows underneath. continue cooking over medium heat for 2 to 3 minutes or until the egg mixture is cooked through but still glossy and moist. turn off the burner. remove skillet from burner.
  • 8 sprinkle half of the shredded cheese over the bake pizza crust. top with scrambled eggs, cooked bacon and potato mixture, and the rest of the shredded cheese. using hot pads, put pizza pan in oven. bake pizza for 5 to 8 minutes or until cheese is melted and bubbly. turn off oven. use hot pads to remove pizza pan from oven. let stand on the cooling rack for 2 minutes before serving.
  • 9 serve with fresh melon wedges and a glass of milk.

Ginger Cookies

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 1/3 cups butter
  • 2 cups sugar
  • 2 eggs
  • 1/2 cup molasses
  • 4 cups flour
  • 2 teaspoons salt
  • 1/2 teaspoon baking soda
  • 4 teaspoons cinnamon
  • 5 teaspoons ginger
  • 2 teaspoons ground cloves

Recipe

  • 1 cream butter and sugar.
  • 2 add egg and syrup and beat well. instead of molasses, i use king syrup. if it's not available where you live, it's a thick golden syrup.
  • 3 mix together flour, salt, baking soda, and spices and add them to the butter mixture and mix well.
  • 4 roll out 1/8 inch thick on slightly floured surface and cut into desired shapes.
  • 5 sprinkle with colored sugar, if desired.
  • 6 bake on slightly greased cookie sheet for 10 minutes at 350 degrees (fahrenheit).

Baked Tofu With Cucumbers

Ingredients

  • Servings: 3
  • 1/2 asian cucumbers or 1/2 lb pickling cucumber
  • 1/2 lb baked asian style tofu or 1/2 lb pressed tofu
  • 1 red chili
  • 3 garlic cloves
  • 1 teaspoon sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons rice vinegar

Recipe

  • 1 wash cucumbers, but don't peel, and julienne.
  • 2 split chili & remove seeds.
  • 3 julienne chili.
  • 4 julienne tofu.
  • 5 mince garlic.
  • 6 mix everything.
  • 7 serve cold or room temperature.

Easy Sweet And Sour Sauce

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 1/2 cup apricot preserves
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon habanero sauce (only for true heat lovers) (optional)

Recipe

  • 1 combine first 6 ingredients in a small saucepan on low-medium heat.
  • 2 stir often, until sugar dissolves.
  • 3 add habanero sauce if using.
  • 4 serve!
