I Love Eggplants!

Ingredients
- 2 japanese eggplants (longer and thinner compared to regular eggplant)
- 3 garlic cloves, finely chopped
- 1 tablespoon fresh ginger, grated
- 2 green onions, thinly chopped
- 2 tablespoons wheat- free tamari soy sauce (can use the kind with wheat as well)
- 1 tablespoon sesame oil
Recipe
- 1 spray a skillet with nonstick cooking spray and heat to medium high.
- 2 chop eggplants to about 1 inch cubes.
- 3 add eggplants along with garlic, ginger, green onions, and tamari in heated skillet and cook until eggplants are tender.
- 4 remove from heat and drizzle with sesame oil.
- 5 stir to combine.
- 6 serve and enjoy!
- 7 tastes great with steamed brown rice. :).
