I Love Eggplants!

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 2 japanese eggplants (longer and thinner compared to regular eggplant)
  • 3 garlic cloves, finely chopped
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, thinly chopped
  • 2 tablespoons wheat- free tamari soy sauce (can use the kind with wheat as well)
  • 1 tablespoon sesame oil

Recipe

  • 1 spray a skillet with nonstick cooking spray and heat to medium high.
  • 2 chop eggplants to about 1 inch cubes.
  • 3 add eggplants along with garlic, ginger, green onions, and tamari in heated skillet and cook until eggplants are tender.
  • 4 remove from heat and drizzle with sesame oil.
  • 5 stir to combine.
  • 6 serve and enjoy!
  • 7 tastes great with steamed brown rice. :).
