Cucumber, Cantaloupe, And Squash Salad

Ingredients

  • Servings: 4
  • 1 cup plain yogurt
  • 1 finely grated lime, zest of
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon fresh ground pepper
  • 3 yellow sumer squash, unpeeled (about 1 lb)
  • 1 english cucumber, unpeeled
  • 1 1/2 tablespoons unseasoned rice wine vinegar
  • 1 teaspoon coarse salt
  • 1/2 large cantaloupe, rind removed, cubed

Recipe

  • 1 make the dressing: combvine the yogurt, lime zest and juice, salt, cumin and pepper. cover and refrigerste 20 minutes.
  • 2 make the salad: using a vegetable peeler or a mandolin, shave squashes and cucumber into wide ribbons, and refrigerate.
  • 3 just before serving, drain cucumbers, and squash ribbons and toss with cantaloupes - drizzle with dressing.
