Cucumber, Cantaloupe, And Squash Salad

Ingredients

- 1 cup plain yogurt
- 1 finely grated lime, zest of
- 1 tablespoon fresh lime juice
- 1/2 teaspoon coarse salt
- 1/2 teaspoon ground cumin
- 1/8 teaspoon fresh ground pepper
- 3 yellow sumer squash, unpeeled (about 1 lb)
- 1 english cucumber, unpeeled
- 1 1/2 tablespoons unseasoned rice wine vinegar
- 1 teaspoon coarse salt
- 1/2 large cantaloupe, rind removed, cubed
Recipe
- 1 make the dressing: combvine the yogurt, lime zest and juice, salt, cumin and pepper. cover and refrigerste 20 minutes.
- 2 make the salad: using a vegetable peeler or a mandolin, shave squashes and cucumber into wide ribbons, and refrigerate.
- 3 just before serving, drain cucumbers, and squash ribbons and toss with cantaloupes - drizzle with dressing.
