Cucumber Salsa

Ingredients

  • 2 cups cucumbers (peeled, seeded &, chopped)
  • 1 cup red onion (chopped)
  • 1 1/2 cups yellow bell peppers (copped)
  • 2 serrano peppers (minced)
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon pepper
  • 1/4 cup seasoned rice vinegar
  • 3 tablespoons fresh lemon juice
  • 1/2 cup cilantro (chopped)
  • 1/4 cup fresh mint (chopped)
  • 3 tablespoons fresh oregano (chopped)
  • 3 tablespoons fresh thyme (chopped)
  • 2 tablespoons fresh dill (chopped)
  • 2 teaspoons fresh marjoram (chopped)
  • 1 teaspoon cardamom (ground)
  • 1 bay leaf

Recipe

  • 1 place all ingredients in a large glass bowl and gently stir.
  • 2 taste cucumber salsa and add more serrano peppers if you desire more heat.
  • 3 season with fine sea salt and pepper to taste. .
  • 4 cover cucumber salsa and chill for several hours. remove bay leaf for service.
