Cucumber Salsa

Ingredients
- 2 cups cucumbers (peeled, seeded &, chopped)
- 1 cup red onion (chopped)
- 1 1/2 cups yellow bell peppers (copped)
- 2 serrano peppers (minced)
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon pepper
- 1/4 cup seasoned rice vinegar
- 3 tablespoons fresh lemon juice
- 1/2 cup cilantro (chopped)
- 1/4 cup fresh mint (chopped)
- 3 tablespoons fresh oregano (chopped)
- 3 tablespoons fresh thyme (chopped)
- 2 tablespoons fresh dill (chopped)
- 2 teaspoons fresh marjoram (chopped)
- 1 teaspoon cardamom (ground)
- 1 bay leaf
Recipe
- 1 place all ingredients in a large glass bowl and gently stir.
- 2 taste cucumber salsa and add more serrano peppers if you desire more heat.
- 3 season with fine sea salt and pepper to taste. .
- 4 cover cucumber salsa and chill for several hours. remove bay leaf for service.
