Ginger Orange Chicken And Squash Stew

Ingredients

  • Servings: 6
  • 1 1/2 boneless skinless chicken breasts, cubed
  • 1 cup chicken broth
  • 1 (14 ounce) can diced tomatoes
  • 1/2 cup orange juice
  • 3 cups cubed winter yellow squash
  • 2 medium potatoes, peeled and cubed
  • 3/4 cup chopped onion
  • 3/4 cup chopped green bell pepper
  • 2 garlic cloves, minced
  • 1 tablespoon grated orange zest
  • 1/2 teaspoon ground ginger
  • 1/2 cup sour cream
  • 1 tablespoon cornstarch
  • salt and pepper
  • 4 cups rice or 4 cups noodles, cooked

Recipe

  • 1 combine all ingredients except sour cream, cornstarch, salt, pepper and noodles, in slow cooker; cover and cook on low for 6-8 hours.
  • 2 stir in combined sour cream and cornstarch, stirring 2-3 minutes.
  • 3 season to taste with salt and pepper. serve over noodles.
