Ingredients

- 1 1/2 boneless skinless chicken breasts, cubed
- 1 cup chicken broth
- 1 (14 ounce) can diced tomatoes
- 1/2 cup orange juice
- 3 cups cubed winter yellow squash
- 2 medium potatoes, peeled and cubed
- 3/4 cup chopped onion
- 3/4 cup chopped green bell pepper
- 2 garlic cloves, minced
- 1 tablespoon grated orange zest
- 1/2 teaspoon ground ginger
- 1/2 cup sour cream
- 1 tablespoon cornstarch
- salt and pepper
- 4 cups rice or 4 cups noodles, cooked
Recipe
- 1 combine all ingredients except sour cream, cornstarch, salt, pepper and noodles, in slow cooker; cover and cook on low for 6-8 hours.
- 2 stir in combined sour cream and cornstarch, stirring 2-3 minutes.
- 3 season to taste with salt and pepper. serve over noodles.
