Greek Chicken And Artichoke Penne

Ingredients

  • Servings: 6
  • 1 1/2 lbs boneless skinless chicken breast halves
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon minced garlic clove
  • 1 (13 3/4 ounce) can artichoke hearts in brine (reserve liquid)
  • 2 cups chicken broth
  • 1 (14 ounce) can diced tomatoes with basil oregano and garlic
  • 1/4 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 lb penne pasta
  • 4 ounces feta cheese, crumbles

Recipe

  • 1 boil pasta in salted water till done.
  • 2 wash and dice raw chicken breast.
  • 3 heat oil add butter and melt.
  • 4 saute' chicken breast for 7 minutes.
  • 5 add garlic saute 3 minutes.
  • 6 season with salt, pepper and oregano.
  • 7 add tomatoes and chicken broth
  • 8 simmer for 10 minutes.
  • 9 pour sauce over pasta and top with feta cheese.
