Greek Chicken And Artichoke Penne

Ingredients

- 1 1/2 lbs boneless skinless chicken breast halves
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 tablespoon minced garlic clove
- 1 (13 3/4 ounce) can artichoke hearts in brine (reserve liquid)
- 2 cups chicken broth
- 1 (14 ounce) can diced tomatoes with basil oregano and garlic
- 1/4 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 lb penne pasta
- 4 ounces feta cheese, crumbles
Recipe
- 1 boil pasta in salted water till done.
- 2 wash and dice raw chicken breast.
- 3 heat oil add butter and melt.
- 4 saute' chicken breast for 7 minutes.
- 5 add garlic saute 3 minutes.
- 6 season with salt, pepper and oregano.
- 7 add tomatoes and chicken broth
- 8 simmer for 10 minutes.
- 9 pour sauce over pasta and top with feta cheese.
