Fruit & Nut Energy Bars

Total Time: 33 mins Preparation Time: 15 mins Cook Time: 18 mins

Ingredients

  • 3 1/2 cups oats (rolled oats or quick cooking oats)
  • 1/2 cup dried cranberries
  • 1/2 cup dried plum
  • 1/2 cup dried apricot
  • 1/2 cup mini chocolate chip
  • 1/4 cup flax seed meal
  • 1/2 teaspoon cinnamon
  • 1/2 cup light brown sugar
  • 1 tablespoon salted butter
  • 1/4 cup honey
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/4 cup water

Recipe

  • 1 1. preheat oven to 350 degrees f.
  • 2 2. combine oats, dried fruits, chocolate chips and flax seed meal in a bowl.
  • 3 3. in a microwaveable container melt butter, brown sugar and honey; once all are melted mix in cinnamon, vanilla, eggs (slightly beaten) and water. mix well.
  • 4 4. mix dry ingredients with wet ingredients. (mixer works best).
  • 5 5. press mixture firmly into a 9 x 13 baking pan that has been sprayed with cooking spray or brush with oil or butter.
  • 6 6. bake for 18-20 minutes until firm.
  • 7 7. cool before cutting into bars.
