Fruit & Nut Energy Bars

Ingredients
- 3 1/2 cups oats (rolled oats or quick cooking oats)
- 1/2 cup dried cranberries
- 1/2 cup dried plum
- 1/2 cup dried apricot
- 1/2 cup mini chocolate chip
- 1/4 cup flax seed meal
- 1/2 teaspoon cinnamon
- 1/2 cup light brown sugar
- 1 tablespoon salted butter
- 1/4 cup honey
- 3 eggs
- 1 teaspoon vanilla
- 1/4 cup water
Recipe
- 1 1. preheat oven to 350 degrees f.
- 2 2. combine oats, dried fruits, chocolate chips and flax seed meal in a bowl.
- 3 3. in a microwaveable container melt butter, brown sugar and honey; once all are melted mix in cinnamon, vanilla, eggs (slightly beaten) and water. mix well.
- 4 4. mix dry ingredients with wet ingredients. (mixer works best).
- 5 5. press mixture firmly into a 9 x 13 baking pan that has been sprayed with cooking spray or brush with oil or butter.
- 6 6. bake for 18-20 minutes until firm.
- 7 7. cool before cutting into bars.
