Ingredients

- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, seeded and chopped
- 2 tomatoes, chopped (or 1 can chopped tomatoes)
- 1/4 teaspoon black pepper
- 2 cups canned black beans (not rinsed)
- cooking spray
Recipe
- 1 spray a heavy pan with cooking spray.
- 2 cook the onion, garlic, and pepper for about 3 minutes or until starting to get soft.
- 3 add the tomatoes and pepper.
- 4 cook and stir for 5 minutes.
- 5 add the beans, cover, and simmer for 20 minutes.
- 6 serve with rice.
