Greek Bow-tie Pasta Salad

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 lb bow tie pasta
  • 1/2 cup extra virgin olive oil
  • 1/3 cup lemon juice (probably about one lemon's worth)
  • 1 tablespoon anchovy paste
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano leaves, crumbled
  • 1 pinch each salt and pepper
  • 1 english cucumber, diced
  • 2 cups small cherry tomatoes
  • 2 cups good quality black olives, pitted
  • 1 cup chopped red onion
  • 1/2 cup chopped fresh parsley
  • 1 cup finely diced feta cheese (about 4 oz/125 g)

Recipe

  • 1 in a large pot of boiling salted water, cook pasta for 8 to 10 minutes or until almost tender but firm; drain well let cool.
  • 2 meanwhile, whisk together oil, lemon juice, anchovy paste, garlic, oregano, salt and pepper; toss with pasta.
  • 3 add tomatoes, sliced olives (leave whole if small), cucumbers, onion and parsley; toss to coat well. gently stir in feta cheese.
  • 4 chill until ready to eat.
