Jambalaya

Total Time: 1 hr 30 mins Preparation Time: 15 mins Cook Time: 1 hr 15 mins

Ingredients

  • 1 -1 1/2 lb chicken breast, cut into 1-inch cubes
  • 1 lb andouille sausage, sliced
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground red pepper
  • 2 tablespoons vegetable oil
  • 4 garlic cloves, chopped
  • 2 medium size yellow onions, chopped (2 cups)
  • 3 celery ribs, chopped (1 cup)
  • 1 medium size green pepper, chopped (1 cup)
  • 3 cups chicken broth
  • 1 (14 1/2 ounce) can diced tomatoes
  • 3 -5 green onions, chopped (3/4 cup)
  • 2 tablespoons chopped fresh parsley (optional)
  • 1 cup uncooked long grain rice
  • 1 teaspoon hot sauce

Recipe

  • 1 sprinkle chicken evenly with salt, black pepper and red pepper.
  • 2 heat oil in a dutch oven over medium heat. add chicken and andouille sausage and cook, stirring constantly until chicken is browned on all sides.
  • 3 add garlic and next 3 ingredients. cover, reduce heat to low, and cook, stirring occasionally, 20 minutes.
  • 4 add chicken broth. bring to a boil over medium-high heat. cover, reduce heat to low, and simmer 35 minutes.
  • 5 add tomatoes and next 4 ingredients. bring to a boil over medium high heat. cover, reduce heat to medium-low, and simmer 20 minutes or until liquid is absorbed and rice is tender.
