Fruit And Almond Basmati Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup uncooked basmati rice
  • water, according to package directions
  • 2 teaspoons butter or 2 teaspoons ghee
  • 2 teaspoons cumin seeds
  • salt
  • 3/4 cup mixed dried fruit, chopped
  • 1/4 cup slivered almonds, toasted (see note below)

Recipe

  • 1 prepare rice according to package directions using butter or ghee, cumin seeds and salt.
  • 2 once cooked, add over the top the dried fruit and almonds; do not stir. place lid loosely over pot and let stand 10 minutes. fluff with fork.
  • 3 to toast almonds: spread in single layer on metal baking sheet. bake in 350°f oven 3 to 5 minutes or until lightly browned, stirring occasionally. (watch carefully to prevent burning.) set aside to cool.
