Fruit And Almond Basmati Rice

Ingredients

- 1 cup uncooked basmati rice
- water, according to package directions
- 2 teaspoons butter or 2 teaspoons ghee
- 2 teaspoons cumin seeds
- salt
- 3/4 cup mixed dried fruit, chopped
- 1/4 cup slivered almonds, toasted (see note below)
Recipe
- 1 prepare rice according to package directions using butter or ghee, cumin seeds and salt.
- 2 once cooked, add over the top the dried fruit and almonds; do not stir. place lid loosely over pot and let stand 10 minutes. fluff with fork.
- 3 to toast almonds: spread in single layer on metal baking sheet. bake in 350°f oven 3 to 5 minutes or until lightly browned, stirring occasionally. (watch carefully to prevent burning.) set aside to cool.
