Ginger Chicken

Ingredients

- 1/2 cup soya sauce
- 1 teaspoon cornflour
- 1500 g chicken pieces
- 1 teaspoon chopped gingerroot
- 1/2 cup water
- 2 teaspoons sugar
- 2 tablespoons oil
- 425 g pineapple chunks
- 2 tablespoons lemon rind
Recipe
- 1 put soya sauce, sugar, cornflour and lemon rind in a large bowl.
- 2 add chicken, coat with sauce.
- 3 leave 1 hour.
- 4 drain chicken.
- 5 fry both sides in oil.
- 6 add ginger, whole tin of pineapple and water.
- 7 simmer gently 1 hour.
- 8 serve with rice.
