Ginger Chicken

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 10
  • 1/2 cup soya sauce
  • 1 teaspoon cornflour
  • 1500 g chicken pieces
  • 1 teaspoon chopped gingerroot
  • 1/2 cup water
  • 2 teaspoons sugar
  • 2 tablespoons oil
  • 425 g pineapple chunks
  • 2 tablespoons lemon rind

Recipe

  • 1 put soya sauce, sugar, cornflour and lemon rind in a large bowl.
  • 2 add chicken, coat with sauce.
  • 3 leave 1 hour.
  • 4 drain chicken.
  • 5 fry both sides in oil.
  • 6 add ginger, whole tin of pineapple and water.
  • 7 simmer gently 1 hour.
  • 8 serve with rice.
