Isle Of Wight Pies

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 1/2 lb shortcrust pastry
  • 2 medium eggs
  • 4 ounces butter
  • 4 ounces sugar
  • 2 ounces rice flour
  • 1 teaspoon ground nutmeg
  • halved glace cherries

Recipe

  • 1 oven 375 degrees or mark 5.
  • 2 grease patty tins.
  • 3 roll out pastry thinly on a lightly floured surface, cut into rounds and place in prepared patty tins. prick bottom of each with a fork.
  • 4 in a bowl, beat eggs and sugar until the mixture is thick and frothy.
  • 5 melt butter in a pan until just liquid, add the ground rice and nutmeg, lastly the egg and sugar mixture.
  • 6 mix well together and half-fill each patty shell with the mixture.
  • 7 place half a cherry on each pie and bake for about 15 minutes or until golden brown.
  • 8 turn out on to a wire rack and leave to cool.
  • 9 these pies keep well.
