Isle Of Wight Pies

Ingredients
- 1/2 lb shortcrust pastry
- 2 medium eggs
- 4 ounces butter
- 4 ounces sugar
- 2 ounces rice flour
- 1 teaspoon ground nutmeg
- halved glace cherries
Recipe
- 1 oven 375 degrees or mark 5.
- 2 grease patty tins.
- 3 roll out pastry thinly on a lightly floured surface, cut into rounds and place in prepared patty tins. prick bottom of each with a fork.
- 4 in a bowl, beat eggs and sugar until the mixture is thick and frothy.
- 5 melt butter in a pan until just liquid, add the ground rice and nutmeg, lastly the egg and sugar mixture.
- 6 mix well together and half-fill each patty shell with the mixture.
- 7 place half a cherry on each pie and bake for about 15 minutes or until golden brown.
- 8 turn out on to a wire rack and leave to cool.
- 9 these pies keep well.
