Island Sweet And Sour Lamb

Total Time: 55 mins Preparation Time: 5 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs boneless lamb, cut into small cubes
  • 1 tablespoon salad oil
  • 1 teaspoon salt
  • 1 dash pepper
  • 1 (8 3/4 ounce) can pineapple tidbits
  • 1/2 cup barbecue sauce
  • 1 tablespoon cornstarch
  • 1 medium green bell pepper, cut into strips

Recipe

  • 1 brown meat in hot oil in skillet. drain.
  • 2 season with salt and pepper.
  • 3 drain pineapple, reserving syrup.
  • 4 add water to syrup to make 3/4 cup.
  • 5 stir syrup and barbecue sauce into browned meat.
  • 6 cover; simmer until meat is tender, about 40-45 minutes.
  • 7 blend cornstarch with 2 t. water; stir into meat.
  • 8 cook and stir until thickened.
  • 9 add pineapple and green pepper; heat through.
  • 10 serve over rice.
