Island Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 1/2 cups water
  • 1 cup uncooked long-grain rice
  • 1/2 cup chopped dried pineapple
  • 2 teaspoons butter
  • 1/2 teaspoon grated lime rind
  • 1/4 teaspoon salt
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon chopped green onion
  • 2 1/2 tablespoons fresh lime juice

Recipe

  • 1 bring 2 1/2 cups water to a boil in a medium saucepan; add rice and next 4 ingredients (rice through salt).
  • 2 cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
  • 3 remove from heat; stir in cilantro, onions, and juice.
