Island Shrimp Salad

Ingredients

- 16 ounces cooked small shrimp
- 2 cucumbers, peeled, seeded and sliced
- 2 cups cherry tomatoes, each cut in half
- 1 cup thinly sliced sweet onion
- 1/3 cup chopped fresh cilantro, can use chopped parsley
- 3/4 cup rice wine vinegar
- 2 tablespoons reduced sodium soy sauce
- 2 teaspoons sugar
- 2 teaspoons sesame oil
- 1/2 teaspoon pepper
Recipe
- 1 combine the salad ingredients in a large mixing bowl.
- 2 in a small bowl, mix together the dressing ingredients well.
- 3 add the dressing to the salad and toss to evenly coat salad.
