Island Shrimp Salad

Ingredients

  • Servings: 8
  • 16 ounces cooked small shrimp
  • 2 cucumbers, peeled, seeded and sliced
  • 2 cups cherry tomatoes, each cut in half
  • 1 cup thinly sliced sweet onion
  • 1/3 cup chopped fresh cilantro, can use chopped parsley
  • 3/4 cup rice wine vinegar
  • 2 tablespoons reduced sodium soy sauce
  • 2 teaspoons sugar
  • 2 teaspoons sesame oil
  • 1/2 teaspoon pepper

Recipe

  • 1 combine the salad ingredients in a large mixing bowl.
  • 2 in a small bowl, mix together the dressing ingredients well.
  • 3 add the dressing to the salad and toss to evenly coat salad.
