Ginger Salad Dressing

Ingredients

  • Servings: 6
  • 1/2 cup scallion, minced (green onions)
  • 1/2 cup peanut oil
  • 1/3 cup rice vinegar
  • 2 tablespoons water
  • 2 tablespoons fresh ginger, minced
  • 1 tablespoon celery, minced
  • 2 tablespoons ketchup
  • 4 teaspoons soy sauce (i prefer low-sodium)
  • 2 teaspoons sugar
  • 3 teaspoons lemon juice
  • 1/2 teaspoon garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 puree all ingredients in a blender or food processor.
