Easy Curried Chickpeas (chana Masala) Vegetarian/vegan

Ingredients

- 1 cup chickpeas (canned or precooked)
- 1 1/2 tablespoons vegetable oil
- 2 small onions, minced
- 2 teaspoons fresh ginger, grated
- 1/2 teaspoon turmeric
- 1/2 teaspoon garam masala
- 1 teaspoon salt
- 1 cup chopped tomato
- 1 red chili pepper, chopped
- 2 tablespoons mint, chopped
- 1/4 cup lemon juice
- 2 cups basmati rice, cooked
Recipe
- 1 heat the oil in a sauce pan.
- 2 saute the onions, garlic, and ginger in the hot oil until the onions are golden brown.
- 3 stir in the remaining ingredients.
- 4 cook over low heat for ten minutes.
- 5 add one cup of water and mix well.
- 6 cook until the tomatoes and chile are very soft.
- 7 then pour over rice and serve.
