Easy Curried Chickpeas (chana Masala) Vegetarian/vegan

Ingredients

  • Servings: 4
  • 1 cup chickpeas (canned or precooked)
  • 1 1/2 tablespoons vegetable oil
  • 2 small onions, minced
  • 2 teaspoons fresh ginger, grated
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garam masala
  • 1 teaspoon salt
  • 1 cup chopped tomato
  • 1 red chili pepper, chopped
  • 2 tablespoons mint, chopped
  • 1/4 cup lemon juice
  • 2 cups basmati rice, cooked

Recipe

  • 1 heat the oil in a sauce pan.
  • 2 saute the onions, garlic, and ginger in the hot oil until the onions are golden brown.
  • 3 stir in the remaining ingredients.
  • 4 cook over low heat for ten minutes.
  • 5 add one cup of water and mix well.
  • 6 cook until the tomatoes and chile are very soft.
  • 7 then pour over rice and serve.
