Herb, Zucchini And Lemon Pasta

Ingredients

  • Servings: 6
  • 8 ounces rotini pasta, uncooked dried (about 2 3/4 cups)
  • 1/4 cup light butter, land o lakes
  • 1 cup red onion, chopped
  • 3 medium zucchini, slice 1/4 inch thick (about 3 cups)
  • 1/4 cup parmesan cheese, freshly grated
  • 2 medium tomatoes, cut into wedges
  • 2 tablespoons lemon juice
  • 1 teaspoon dried basil leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 cook rotino according to package directions. drain.
  • 2 meanwhile, melt light butter in a 12-inch skillet over medium heat; add onion and zucchini. cook, stirring occasionally, until zucchini is crisply tender (5 to 7 minutes). add cooked rotino and all remaining ingredients. cover; let stand 2 minutes or until tomatoes are heated through.
