Failsafe Chicken Schnitzel, Mash And Beans

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 4 chicken thighs
  • 1 egg
  • 1 tablespoon skim milk
  • 1 1/2 cups rice bubbles, made into crumbs (measure crushed)
  • 1 tablespoon garlic salt
  • 1 tablespoon parsley flakes (dried or fresh)
  • 1 tablespoon margarine, for cooking (i use nettelex)
  • 300 g potatoes
  • 1/2 cup milk, for adding to mash
  • 2 tablespoons margarine, for adding to mash
  • 200 g fresh green beans

Recipe

  • 1 peel potatoes and put in a pot and boil till soft. when soft mash together with margarine and milk.
  • 2 steam beans until tender.
  • 3 beat egg and milk in one bowl and set aside, in another bowl combine rice crumbs, garlic salt and parsley.
  • 4 dip each chicken thigh in egg mixture first and then rice crumb mixture next. press down firmly as you go.
  • 5 heat frying pan with margarine and fry chicken until cooked and brown.
  • 6 serve with mash and beans.
