Gluten Free Blueberry Muffins

Ingredients
- 2 1/2 cups brown rice flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup honey
- 1/3 cup vegetable oil
- 1/3 cup milk
- 1/2 teaspoon vanilla extract
- 3 eggs
- 1 1/2 cups blueberries (fresh or frozen)
Recipe
- 1 preheat the oven to 325.
- 2 line 12 muffin cups.
- 3 in a large mixing bowl, stir together the flour, baking soda, baking powder, salt and cinnamon.
- 4 in a separate bowl, blend the honey, vegetable oil, milk, vanilla and eggs.
- 5 stir the wet ingredients into the dry ones.
- 6 gently mix in the blueberries.
- 7 divide the batter evenly into the muffin cups.
- 8 bake for 20-25 minutes.
