Gluten Free Blueberry Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 2 1/2 cups brown rice flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup honey
  • 1/3 cup vegetable oil
  • 1/3 cup milk
  • 1/2 teaspoon vanilla extract
  • 3 eggs
  • 1 1/2 cups blueberries (fresh or frozen)

Recipe

  • 1 preheat the oven to 325.
  • 2 line 12 muffin cups.
  • 3 in a large mixing bowl, stir together the flour, baking soda, baking powder, salt and cinnamon.
  • 4 in a separate bowl, blend the honey, vegetable oil, milk, vanilla and eggs.
  • 5 stir the wet ingredients into the dry ones.
  • 6 gently mix in the blueberries.
  • 7 divide the batter evenly into the muffin cups.
  • 8 bake for 20-25 minutes.
