Crock Pot Aloo Rajma(kidney Bean) Curry

Ingredients
- Servings: 6
- 5 medium russet potatoes, diced, i usually do not peel them
- 3 (10 ounce) cans ro*tel tomatoes, i use 2 original and 1 hot
- 31 ounces canned kidney beans, rinsed and drained
- 2 onions, chopped
- 2 tablespoons vegetable oil
- 1 tablespoon curry powder
Recipe
- 1 heat vegetable oil in skillet.
- 2 add curry powder and saute for 1 minute or until fragrant.
- 3 add onions and saute for 2-3 minutes or until lightly browned.
- 4 add ro*tel and simmer on low for 2 minutes.
- 5 pour mixture in crockpot.
- 6 add potatoes and kidney beans.
- 7 stir mixture.
- 8 cook on low 6-8 hours or on high 3-6 hours.
- 9 serve over rice.
