Crock Pot Aloo Rajma(kidney Bean) Curry

Total Time: 8 hrs 15 mins Preparation Time: 15 mins Cook Time: 8 hrs

Ingredients

  • Servings: 6
  • 5 medium russet potatoes, diced, i usually do not peel them
  • 3 (10 ounce) cans ro*tel tomatoes, i use 2 original and 1 hot
  • 31 ounces canned kidney beans, rinsed and drained
  • 2 onions, chopped
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder

Recipe

  • 1 heat vegetable oil in skillet.
  • 2 add curry powder and saute for 1 minute or until fragrant.
  • 3 add onions and saute for 2-3 minutes or until lightly browned.
  • 4 add ro*tel and simmer on low for 2 minutes.
  • 5 pour mixture in crockpot.
  • 6 add potatoes and kidney beans.
  • 7 stir mixture.
  • 8 cook on low 6-8 hours or on high 3-6 hours.
  • 9 serve over rice.
