Healthy Oatmeal Pancakes

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 cup whole wheat flour (i use freshly ground hard wheat)
  • 1 cup rolled oats
  • 1/4 cup flax seed, freshly ground (optional)
  • 2 teaspoons cinnamon
  • 1 tablespoon sucanat or 1 tablespoon brown sugar
  • 1 teaspoon baking soda
  • 2 eggs
  • 2 -2 1/4 cups buttermilk
  • 1/4 cup olive oil

Recipe

  • 1 in a large bowl, combine dry ingredients.
  • 2 add buttermilk, eggs, and oil. stir into dry ingredients just until blended - do not overmix.
  • 3 pour batter by 1/4 cupful onto a lightly greased hot griddle.
  • 4 turn when bubbles form on top of pancakes. cook until second side is golden.
  • 5 serve with freshly cut strawberries if possible and warm maple syrup. yum!
