Cherry Heart Pie

Ingredients

  • Servings: 5
  • 2 cups enjoy life very berry crunch granola cereal
  • 2 tablespoons tapioca or 2 tablespoons rice flour
  • 1 tablespoon brown sugar
  • 3 tablespoons butter, margarine (optional) or 3 tablespoons safflower oil dash salt (optional)
  • 2 (14 1/2 ounce) cans drained tart cherries
  • 1/4 cup , the cherry juice remaining in can
  • 2/3 cup brown sugar
  • 4 teaspoons quick-cooking tapioca
  • 1 teaspoon almond extract (optional)

Recipe

  • 1 grind granola in food processor or blender until fine. add remaining crust ingredients and process until well blended. press into greased heart-shaped pie plate. preheat oven to 350°f while waiting, combine all filling ingredients in a bowl. let stand 15 minutes. pour on top of crust and bake 15-20 min at 350°f or until filling begins to bubble.
