Healthy Oatmeal Raisin Muffins

Ingredients
- 1 1/4 cups whole wheat flour
- 1 1/2 cups quick-cooking rolled oats
- 1/3 cup firmly packed brown sugar
- 2 teaspoons baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 3/4 cup water
- 1/4 cup skim milk
- 1/4 cup oil
- 1 egg
- 1/2 cup raisins
Recipe
- 1 heat oven to 400 degrees. grease 12 muffin cups.
- 2 in mixing bowl, combine all dry ingredients; mix well.
- 3 in large bowl, combine all wet ingredients; blend well.
- 4 stir in dry ingredients, just until moistened. stir in raisins.
- 5 spoon batter into prepared muffin cups, filling 2/3 full.
- 6 bake for 15-20 minutes or until toothpick inserted in center comes out clean.
- 7 immediately remove from pans.
