Creole Smokies

Total Time: 1 hr 10 mins Preparation Time: 25 mins Cook Time: 45 mins

Ingredients

  • 1 lb fresh okra
  • 1/2 cup onion, chopped
  • 2 tablespoons shortening
  • 1 (12 ounce) package smoked sausage
  • 1 teaspoon salt
  • 1 (10 ounce) can rotel tomatoes
  • 2 cups rice, cooked

Recipe

  • 1 wash and slice okra.
  • 2 fry okra and onion in hot shortening until okra is no longer slimy( about 15 min ).
  • 3 cut sausage into 1/2 " slices and add with salt and tomatoes.
  • 4 cover and simmer 20 minute.
  • 5 serve over rice.
