Kamut Salsa Lettuce Wraps With Cojita Cheese Crumbles

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 cup kamut
  • 4 cups water
  • 8 -10 ounces extra lean ground beef
  • 1/2 cup salsa
  • 1/2 cup fresh spinach leaves
  • 1 romaine lettuce hearts
  • 3/4 cup cotija cheese, (or feta), crumbled

Recipe

  • 1 cook kamut according to package directions in the water, drain if necessary.
  • 2 brown ground beef, mix in salsa, spinach leaves, and mix with cooked kamut.
  • 3 spoon into romaine leaves.
  • 4 top with crumbled cheese.
